Easy vegan jambalaya

Ingredients
- 1 shallot

- 600 Gram tomatoes
- 4 tablespoons of soy sauce
- 4 teaspoons of dried oregano
- 2 teaspoons of dried thyme
- 1 tablespoon of garlic powder
- 1 tablespoon of onion powder
- 1 tablespoon of cumin powder
- 1 tablespoon of paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder
- 400 cups of raw rice
- 6 glasses of vegetable broth (or water)
- 4 tablespoons of tahini, if desired
- 2 cups of green beans (cooked)
- 1 cup cooked red beans
- Fresh parsley (for decoration)
Steps
- Add the chopped vegetables to the pan, cook with water for about five minutes, use medium heat. If you want to add vegetables, remove tahini from list.
- Add the tomatoes, cook again for about five minutes.
- Add the soy sauce, add the spices, and mix thoroughly. Add vegetable broth (or water) then cook until boiling. Cook until the rice is cooked.
- Then also add tahini, green beans, and beans, cook again for about 2 minutes after stirring.
- Add parsley if you want it (chopped).
- This dish can last around four days if you store it in the refrigerator.
